How do you change the level, background, board, stage, or music when playing through xbox live?  Can you???

Everytime I play online it's the same background and music over and over. That gets kind of boring, does it ever change?  Also, right after selecting a character there's a option that says "Lv.1  Lv.2  Lv.3" everytime I try to select a different Lv it makes a funny noise and doesn't let me change it  :(  how do you change it?
