Seeing as how the AC games allow you to customize the mechs, why not allow the deaths, too? They could have unlockable options to aquire for death sequences. One could be like how the prototype-AC's die when the fly off and implode. Another could be where the AC falls apart piece by piece. Or, as someone mentioned, go rag-doll and flop around as a lifeless projectile (if they put in some better physics).
Of course they could put all of these on, along with other mentioned ways to die, and setup a random sequence for the appropiate occasion. It wouldn't look cool for an AC to look like they got sliced in half by a grenade launcher =P
But really I think they should just use some really good physics. The visuals of the game would benefit greatly from it.
