I don't believe they were random. I think it had a lot to do with where in the enemy's swing you actually parried. Performing a parry earlier in the swing would actually get one button to flash, while performing one later in the enemy's swing would get you another. At least that's what I thought I read somewhere.
It always seemed to me that it had to do with where the enemy was attacking from. From in front, Y. From the right, B. From the left, X. From behind, random. I could be wrong though, been a while since I played it.
