Sorry if this is an ancient question at this point, but I'm new to SC. If you download Darth Vader, do you get his story mode and everything, or is he just unlocked as a fighter?

You get the fighter, his episode in the Story, a full special video of him ariving at the planet and fighting Mitsurugi,  a different game opening video, art in the art gallery, and his entry in the Chain of Souls.

No. DLC doesn't work with demos.
