If you're using the HDMI port on the 360, you can get sound to speakers/pc by using the 360 Component Cable and stripping part of the plastic casing so that you can plug both the Component Cable and HDMI into the 360. Then use a 3.5mm Male stereo to two RCA Female adapter to PC line-in, or whatever you need to connect to your speaker setup.
Also, if you don't wanna strip the shielding off of a cable, there are a few third-party cables that will fit next to an HDMI cable -- my third-party VGA cable fits (albeit a little snugly, but not enough to make me fear damaging either port), which I use for S/PDIF output to my receiver.
You can also just use one cable by buying MS's HDMI cable that has combo optical digital/stereo RCA connectors, but you'll still need to get an HDMI-to-DVI adaptor for video on top of the 3.5mm-to-RCA for sound. By the time you do all of that, you probably might as well just buy a new monitor with HDMI ports.
