I guess you shouldnt take my word for it since I havent done it yet, but from everything I read, no. It says prestige does not reset xp or challenges for a weapon.
Also ... as someone asked earlier .... I see no option to prestige the knife

I started out using the mp7 as a primary and no secondary. But along the line i asked myself why since I was forcing myself not to use a gun so ...

Tier 1 ........ lightwieght and a variable. so far its been bind eye or hardline, I may decide to use ghost in the future but havent unlocked it yet.
Tier 2 ... cold blooded. I would have said its obviously the only useful perk here, but I dont know how scavenger works yet. It sounds as though it resupplies lethal equipement, and that would be quite handy
Tier 3 ..... dexterity, extreme conditioning. I would normally use dead silence for knifing, but at the moment it seems noone can here footsteps anyhow. I cant, and from experience, noone I have chased down has ever suddenly turned and shot me. I may swap out dexterity for ebgineer. I have been getting blown up a bit by bbs. Sometimes I can run past them but most of the time not. I dont think the bbs are as obvious as they were in the past.
lethal ...... semtex. I will probably work on challenges with other equipement, exp. the axe with my knife class, but I really like my semtex. I dont know why but i'm really good at sticking enemies with semtex, but I cant seem to hit them with an ax
Tac ...... I've been loving the black hat x2. I can take down uavs, and steal enemy care packages from a distance, and even in ffa this adds to your scorestreak.

I decided last night to play some nuketown. Kind of silly to play objective games with a knife, but figured wtf. I was pleasantly suprised at my success. I was getting the most or close to the most caps/plants and once I had a cap I would head straight for the front and upstairs for a flanking pathway. the sides were always well protected, but I could easily go straight through the middle uncontested most of the time.
